Favara, a hilltop commune in southwestern Sicily's Terre Siciliane zone, sits on limestone-rich soils at approximately 250 meters elevation, where maritime winds from the Strait of Sicily moderate the intense Mediterranean heat. Stella Del Sud sources from this terroir to craft a Nero d'Avola–dominant blend with Syrah, fermented in temperature-controlled stainless steel and aged 12 months in neutral oak to preserve varietal expression without oak overlay. The wine captures the mineral spine of Favara's calcareous bedrock—a signature of the region's volcanic limestone geology—while the extended neutral-oak aging allows the dark-skinned varieties to develop secondary complexity without new-wood tannin interference. This is a wine built for food, not for oak theater: the limestone terroir and restrained oak regime create a framework where acidity and tannin remain in service to the fruit rather than dominating it.
