Three Dark Horses sources fruit from Clare Valley's slate and limestone soils, elevation 400–500m, where cool nights preserve acidity in warm-climate Shiraz. Sgt blends Shiraz with Cabernet Sauvignon and Grenache, fermented in temperature-controlled stainless steel with extended skin contact before 12 months in French and American oak (30% new). The wine avoids over-extraction; tannins remain fine-grained and integrated rather than dominant. A distinctive feature is the restraint—many Clare Valley reds push toward extraction and oak saturation, but this expression prioritizes freshness and drinkability without sacrificing structure.
