McLaren Vale's limestone terroir defines this Thomas Goss Shiraz. The subregion sits 80–120 metres above sea level on the Fleurieu Peninsula, where Cambrian limestone and clay loams create mineral tension in ripe fruit. Fermentation in temperature-controlled stainless steel followed by 12–18 months in French oak (mix of new and seasoned) builds the wine's mid-palate weight without masking varietal character. The limestone substrate—rare for Australian Shiraz—pushes acidity and structural definition rather than jammy extraction. Drinking window: 2024–2032, with cellaring potential as secondary flavours develop.
