Penfolds Bin 389 earned its 'Baby Grange' reputation through a single deliberate decision: rather than sourcing new oak, the winemaking team matures each vintage in barrels previously used to age Grange (Bin 95) — hogsheads already seasoned with the house's most concentrated Barossa Shiraz. That residual oak character, absorbed over Grange's 18–20-month tenure, transfers a layer of complexity that new wood alone cannot replicate.
The 2021 fruit draws from Penfolds' deep Barossa Valley holdings, anchored by the Kalimna property — 153 ha of ancient, deep alluvial and sandy loam soils that have never been touched by phylloxera, allowing ungrafted vines to reach extraordinary age and root depth. These free-draining soils concentrate the Cabernet Sauvignon and Shiraz components, delivering mid-palate density without sacrificing structure.
The blend follows Penfolds' multi-regional philosophy: Cabernet Sauvignon and Shiraz co-fermented and blended across South Australian districts, with acclimatised pure yeast cultures and temperature-controlled fermentation — a technique pioneered at Penfolds by Ray Beckwith. The result is a wine that sits architecturally between Grange's power and St Henri's restraint.
This 2021 expression is presented in a Lunar New Year Snake Edition — a limited-release format that does not alter the wine inside, making it a collectible vessel for a production-identical Bin 389. Drink 2025–2035.
