Bertani's Secco represents a deliberate constraint: the winery, founded in 1857 in Negrar di Valpolicella, dries Corvina grapes to concentrate phenolics and acidity rather than sugar, then ferments in temperature-controlled stainless steel to preserve aromatic precision. The result is a wine that reads almost austere against the region's riper conventions.
Site: Valpolicella's eastern amphitheater, where Corvina thrives on limestone-rich marl and alluvial soils at 150–250 meters elevation. The Negrar microclimate—cool morning air from Lake Garda, afternoon heat—creates the tension between ripeness and acidity that defines the vintage.
Technique: Grapes are partially dried for 2–3 weeks to elevate phenolic concentration and reduce water content, then fermented in stainless steel at controlled temperature to retain volatile aromatics. No oak aging; the wine is bottled young to preserve its mineral, primary-fruit character.
Special Feature: The name Secco (dry) signals the winery's rejection of the appassimento method's sweetness trap—this is dried-grape wine stripped of residual sugar and softness, a structural exercise in restraint.
