Penfolds Bin 704 Napa Valley Cabernet Sauvignon
฿3,880
When Penfolds extended its multi-regional blending doctrine beyond South Australia into Napa Valley, it made a deliberate transgression: a house built on winemaker authority over terroir orthodoxy now had to reconcile that philosophy with California's most appellation-proud valley. Bin 704 is the result — Cabernet Sauvignon sourced from Napa Valley, vinified under the same continuity-driven winemaking lineage that has passed through only four Chief Winemakers since 1844. Napa Valley's deep alluvial benchland soils — gravel and loam over volcanic subsoil — deliver the mid-palate density that Penfolds' house style demands, while the valley's diurnal temperature swing preserves the structural acidity the team requires for ageability. Maturation follows Penfolds' red-wine protocol: a combination of American and French oak, consistent with the hogshead-forward regime that has defined the portfolio since Max Schubert's Bordeaux-inspired experiments in the 1950s. The result sits within a Cabernet framework but carries the unmistakable Penfolds signature — fruit generosity anchored by oak structure — rather than the single-château restraint typical of Napa's prestige tier. What is categorically unusual here is the application of a deliberately non-terroir, winemaker-led blending philosophy to a valley where provenance specificity is the dominant commercial and critical language.
