Disobedience by Francis Mallmann Red Blend
฿฿
Francis Mallmann's Disobedience marks the chef's entry into winemaking as a deliberate provocation against Mendoza orthodoxy. The vineyard sits in Maipú, eastern Mendoza, at 650–750 meters elevation on alluvial soils with gravelly drainage—terrain that produces darker, more structured fruit than the region's higher-altitude benchmarks.
The blend centers on Malbec, with Cabernet Sauvignon and Syrah in supporting roles. Fermentation occurs in temperature-controlled stainless steel, followed by 12 months in French oak (30% new), allowing the wine to develop secondary complexity without oak dominance. The name itself—Disobedience—signals Mallmann's refusal of Mendoza's consensus style: rather than seeking ethereal elegance, the wine pursues density and textural grip.
The 2019 vintage (or current release) delivers the signature Maipú earthiness—dark plum, graphite minerality, and black pepper—anchored by medium-full tannins that frame rather than overwhelm. Drinking window: 2024–2032.
