When Vega Sicilia declines to produce Único in a given vintage, the fruit doesn't disappear — it becomes Valbuena 5°, a deliberate declassification that makes this wine the estate's honest measure of what the Duero's lower concave slopes actually deliver. Finca Vega Sicilia's eroded colluvial lower parcels near the river, sitting at 700–750 m on the south bank of the Duero, yield a Tinto Fino-dominant blend with quartz gravel deep in sandy subsoil; the river moderates frost risk and sustains subsoil moisture through Ribera del Duero's brutal continental summers. Fermentation proceeds with native yeast in stainless steel at controlled temperature, malolactic also in stainless, preserving primary fruit definition before the wine enters 225-litre French and American oak barriques alongside 20,000-litre oak vats for a combined oak-and-bottle cycle of exactly five years — the '5°' of the name. The blend is predominantly Tinto Fino with a variable Merlot component, a pairing that softens the angular Castilian structure without erasing it. What separates Valbuena from virtually every other Ribera del Duero at this tier is that five-year patience: most DO peers release at two to three years. The 2007 vintage, now with 17 years of bottle age, sits in a generous tertiary window — dried cherry, cedar, iron-rich earth, and tobacco leaf — with tannins fully resolved and the estate's characteristic structural backbone still present.
