Founded in 1880 and now stewarded by the fourth-generation Drouhin family, Maison Joseph Drouhin completed a full biodynamic conversion across its 100-hectare Burgundy estate under Philippe Drouhin — earning ECOCERT certification for the 2009 vintage, an extraordinary commitment for a négociant-domaine of this scale. Pommard sits on the Côte de Beaune's heaviest clay-limestone soils, a denser, iron-rich terroir that naturally pushes Pinot Noir toward darker fruit, firmer tannin architecture, and a more muscular frame than its neighbours in Volnay or Beaune. Vinification follows total destemming for this village-level cuvée, with fermentation and maceration in small open vats over 2–3 weeks using indigenous yeasts, pigeage and pumping-over throughout. Élevage runs 12–18 months in 228L or 300L French high-forest oak barrels at 15–25% new wood, seasoned approximately three years before coopering — a deliberate restraint that keeps oak as a structural tool rather than a flavour source. The house philosophy of finesse over extraction is the transgression here: where many Pommard producers lean into the appellation's power, Drouhin's winemaker Véronique Boss-Drouhin consistently pulls toward precision and silky tannin resolution. The 2021 vintage — marked by spring frost and mildew pressure, strict sorting, and small yields — delivered wines of notable freshness and precision; this Pommard rewards 3–8 years of cellaring.
