Nearly 180 years later, Koonunga Hill distils that same house logic into its most accessible form: a deliberate, winemaker-led blend that prioritises fruit consistency over single-terroir declaration, the philosophical inverse of Burgundy. Sourced from Barossa Valley and broader South Australia, the Shiraz component draws on the region's ancient, deep alluvial and sandy loam soils — phylloxera-free ground that yields old-vine concentration without the need for irrigation stress. The Cabernet Sauvignon component adds structural backbone and dark-fruit definition to the warmer-climate Shiraz core. Vinification follows the Penfolds house protocol: temperature-controlled fermentation using acclimatised yeast cultures, with maturation in seasoned oak that integrates without dominating — the same philosophy that governs St Henri's large old-vat regime, scaled to this tier.
