Cono Sur was founded in 1993 as a Pinot Noir specialist, yet its 20 Barrels tier proves the house applies the same exacting standards to Cabernet Sauvignon — a deliberate statement that Burgundian rigour belongs in Maipo as much as Casablanca. Maipo Valley, Chile's Andean benchmark for Cabernet, delivers alluvial soils over clay and gravel, with diurnal temperature swings driven by cold air descending from the Andes at night, preserving acidity and slowing phenolic development through the growing season. In the cellar, the wine undergoes approximately 17 months of aging in French oak barrels — a notably extended regime for this tier, and longer than the 14-month program applied to the flagship 20 Barrels Pinot Noir. New-oak percentage is not publicly disclosed, but the barrel-only format (no foudre component, unlike the Pinot Noir sibling) signals a deliberate push toward structural density and oak integration. The 20 Barrels name itself signals strict selection: only the finest lots from the vintage are retained, a production philosophy that runs counter to the house's high-volume Bicicleta identity. What makes this expression unusual is the producer context — a winery whose entire identity and consultant investment (Martin Prieur of Domaine Jacques Prieur) was built around Pinot Noir, here channelling that same precision into Chile's most competitive red variety. The 2019 vintage in Maipo delivered a warm, dry growing season with good concentration and firm tannic architecture, best approached from 2024 onward with a drinking window extending comfortably to 2030.
