Bob Levy and Martha McClellan — the winemaking architects behind Harlan Estate and Sloan respectively — planted six acres off Franz Valley School Road in 1999 on a former horse stable, deliberately choosing virgin ground above Calistoga to avoid viticultural exhaustion. That founding decision shapes everything: the site sits at approximately 500 feet on the western Mayacamas foothills, where Aiken Loam over compressed tufa forces Cabernet Sauvignon roots deep, and cool Pacific air funneled through the Calistoga Gap between Diamond Mountain and Mount St. Helena moderates what would otherwise be extreme mountain heat. Yields hold at 1–2 tons per acre under dry-farming protocols overseen originally by viticulturist David Abreu. The winery's defining transgression is barrel fermentation in new 225L French oak (Taransaud and Djarnajou cooperages): grapes are loaded by hand into open barrels, heads sealed, and the barrels rolled on rollers throughout fermentation — eliminating punch-downs and pump-overs entirely. It takes three to four fermentation barrels to fill a single aging barrel, concentrating the selection further. The wine is bottled unfined and unfiltered. Ampersand is the estate's second wine, drawing from the same six-acre block as the flagship, making it one of the most terroir-specific second labels in Napa. The 2005 vintage, now approaching two decades of bottle age, will have integrated its new-oak frame; tannins from the rolling-extraction method tend toward silky resolution rather than grip, suggesting a drinking window that rewards opening now through the late 2020s.
