When Maurice Drouhin acquired Clos des Mouches in 1921, he established Beaune's southern slopes as the house's spiritual heartland — a commitment the fourth generation has deepened by converting all 100 hectares to certified organic and biodynamic farming, ploughing by horse between vine rows. The Beaune Premier Cru appellation sits on clay-limestone soils on those same southern slopes, positioned geographically between Corton-Charlemagne and Montrachet; the clay fraction retains moisture through dry summers while the limestone drives the chalky mineral tension that defines the appellation's character. Vinification follows partial to significant whole-cluster inclusion for Premier Cru fruit, with fermentation and maceration in small open vats over 2–3 weeks using indigenous yeasts and pigeage. Élevage runs 12–18 months in 228L–300L French high-forest oak barrels at 15–25% new wood, with all decisions governed by tasting evaluation rather than fixed protocol. What separates Drouhin from peers of comparable scale is the singular restriction of the entire portfolio to Pinot Noir and Chardonnay — no commercial concessions to other varieties — preserving an unusually coherent terroir focus across every tier. The 2019 vintage delivered full, aromatic, expressive fruit with good structural backbone; the wine is appealing now but carries the architecture for a further 8–12 years of development.
