Springfield Estate's The Work of Time is a Bordeaux-style red blend from Robertson, Western Cape, built on Cabernet Sauvignon with supporting Cabernet Franc, Merlot, and Petit Verdot. The 2004 vintage demonstrates the architectural precision of a classic four-varietal blend: dark fruit intensity anchored by cedar and oak structure, with emerging tertiary tobacco and leather notes reflecting two decades of bottle age.

Full-bodied and high in tannin, this wine rewards decanting and pairs naturally with grilled red meat, lamb, and slow-braised beef. The slate minerality and black pepper spice add textural complexity to the mid-palate, while the wine's acidity ensures food-friendly balance across rich, savory dishes.
