The blend centers on Grenache (60–70%), with Cinsault and Syrah completing the structure. Delas employs cold-soak maceration (12–24 hours) in temperature-controlled tanks to extract color and tannin without oxidative stress, then ferments in concrete vessels to preserve aromatic clarity. The wine sees no oak aging—a deliberate choice that keeps the focus on mineral tension and red-fruit precision rather than oak overlay.
The transgression here is tannin: this is not a quaffable summer rosé. The phenolic grip rivals light reds, making it a serious food wine rather than an aperitif. Drink 2024–2027 for maximum freshness and structural definition.
