The GlenAllachie 2011 Oloroso Hogshead Cask no. 1950 (700 ml)
฿5,700
When Billy Walker's consortium acquired GlenAllachie in 2017, one of the first acts was to audit the inherited warehouses — and it was among those pre-2017 casks that single barrels like Cask no. 1950 were identified. Distilled in 2011 under the Chivas Brothers era, this spirit entered a single Oloroso hogshead and matured undisturbed in one of the distillery's 16 on-site warehouses beside the Lour burn, at the foot of Ben Rinnes in Aberlour, Banffshire. The site's spring- and snowmelt-fed water and cool Speyside microclimate slow oxidation through the warehouse walls, allowing the hogshead's tighter wood grain to transfer Oloroso character incrementally rather than aggressively.
The production signature here is GlenAllachie's 160–164 hour fermentation — among the longest standard fermentation windows in Scotland — which builds a dense ester load in the new make before a single drop of sherry wood enters the equation. Double distillation through lantern-shaped wash stills (36,300 L) and onion-shaped spirit stills (23,900 L), combined with horizontal shell-and-tube condensers, preserves that fruity, muscular character into the cask. Bottled at natural cask strength, non-chill filtered, natural colour — no dilution, no fining.
The special feature: a hogshead (roughly 250 L) concentrates Oloroso influence more intensely than GlenAllachie's more common Oloroso puncheons, compressing the interaction between spirit and wood into a tighter, more assertive exchange. This is a pre-Walker distillate shaped entirely by post-Walker curation philosophy.
