For its first five decades, GlenAllachie was an anonymous blending workhorse for Chivas Regal and Clan Campbell — its single malt identity essentially nonexistent. When Billy Walker acquired the distillery in 2017, he slashed output by roughly 87% and extended fermentation to 160–164 hours, among the longest standard fermentation windows in Scotland, a deliberate engineering choice to maximise ester formation and drive the muscular, fruit-forward new make that defines the house today.
The distillery sits at the foot of Ben Rinnes near Aberlour, Banffshire, drawing process water from two damheads — Blackstank and Heanshead — fed by spring- and snowmelt streams off the mountain's north-east slopes. That cold, mineral-clean water feeds a production line built around first- and second-fill casks exclusively, with over 30% of stock maturing in Pedro Ximénez and Oloroso Sherry puncheons and hogsheads alongside ex-Bourbon American oak foundations.
The Cask Strength expression is bottled at natural cask strength without dilution, non-chill filtered, natural colour — no adjustment, no cosmetic intervention. What makes this release genuinely unusual within Speyside is the cask diversity underpinning it: Port, Marsala, Barolo, Madeira, and Moscatel casks all rotate through the programme, giving Walker the blending palette of a wine négociant rather than a conventional malt distillery. Drinking window: now through 10+ years for those who prefer the fruit to integrate further.
