When William Grant's family built Glenfiddich in 1886 using second-hand stills and spring water from the Conval Hills, the ambition was survival, not luxury — yet the Robbie Dhu Spring they fought to protect (purchasing the surrounding highland catchment outright) remains the sole water source for every stage of production, including reduction to bottle strength. That mineral-rich, soft highland water shapes the distillate's famously delicate structure, which makes the Grand Cru's finishing strategy all the more deliberate. After a minimum 23 years in American and European oak, the whisky undergoes a 6-month finish in French cuvée wine casks — a finishing regime borrowed from the wine world and applied to a spirit base that, by house design, is already lighter and more orchard-forward than most Speyside peers. The lightness is architectural: Glenfiddich's distinctively small, swan-neck copper pot stills — pear-shaped wash stills of approximately 9,000 L and spirit stills of approximately 4,500 L — produce a new make with high copper contact and pronounced reflux, yielding a fruity, low-sulphur spirit that carries 23 years of oak without being overwhelmed. A mandatory marrying step in large oak tuns precedes bottling, integrating the wine-cask influence across the vatting. What no peer in the age-statement Speyside tier does: finish a 23-year malt in French sparkling-wine casks, then bottle it at the distillery where it was distilled, matured, and reduced — entirely on-site in Dufftown.
