Tomintoul Cognac Cask Finish (700 ml)
฿2,600
Founded in 1964 by Glasgow whisky traders Hay & Macleod and W. & S. Strong, Tomintoul spent its first 35 years almost entirely as anonymous blending stock — a paradox for a distillery running 3.3 million litres annually at Ballindalloch, Banffshire. When Angus Dundee acquired it in 2000, the house began systematically exploring cask finishing as its primary identity statement. The Cognac Cask Finish is among the most laterally ambitious in that programme.
Situated at approximately 345 metres in the Cairngorms National Park, the distillery draws water from the Ballantruan Spring in the Cromdale Hills — exceptionally soft and pure, a direct contributor to the light, high-reflux spirit character that makes cask influence so legible here. New make is collected at ~69% ABV from steam-heated pot stills, then matured primarily in American white oak ex-Bourbon casks before transfer into Cognac casks for finishing — a fruit-eau-de-vie wood source Tomintoul deploys alongside Oloroso, Madeira, Pinot Noir, and Tempranillo across its range.
What distinguishes this expression within Speyside is the Cognac cask itself: Limousin or Tronçais oak previously seasoned with French brandy introduces dried apricot, beeswax, and faint rancio layers onto a malt base that, by design, offers minimal resistance. The result is a finishing experiment where the wood does unusually visible work on an intentionally delicate canvas.
