In 1963, Glenfiddich became the first Scotch distillery to actively export single malt as a premium product in its own right — a commercial transgression that effectively invented the modern category. The 12 Year Old remains the expression that carried that argument to the world.
The distillery sits at the base of the Conval Hills in Dufftown, Speyside, drawing exclusively from the Robbie Dhu Spring — a mineral-rich highland source the Grant family protected by acquiring the surrounding catchment land. That water, soft and low in mineral interference, is used both in mashing and in reduction to bottling strength, and its character runs through every drop.
Production is anchored by small, pear-shaped swan-neck copper pot stills — 14 wash stills (~9,000 L) and 28 spirit stills (~4,500 L) — whose geometry drives high copper contact and a deliberately light, orchard-fruit new make. The 12 YO matures across an approximately 85% ex-bourbon American oak / 15% ex-Oloroso sherry European oak split for a minimum of 12 years, then undergoes a mandatory 6-month marriage in 2,000 L oak tuns before bottling — a vatting step that distinguishes Glenfiddich from distilleries that bottle direct from individual casks.
Unusually for a distillery of this scale, all distillation, maturation, and bottling occur on a single site in Dufftown, with in-house coppersmiths hand-building every still to preserve shape consistency across generations. Green pear, candied apple, vanilla, and a faint dried-fruit undercurrent from the sherry component; the tun marriage rounds any angular oak into a seamless whole.
