Founded in 2011 by five partners determined to revive craft distilling in Ireland, Glendalough made a deliberate break from convention by finishing its Pot Still expression in virgin indigenous Irish oak (Dar Ghalda) — a wood type with a larger cell structure than American or European oak, accelerating extraction of vanilla, chocolate, and spice in ways no standard cask regime replicates. The distillery draws process water from Wicklow Mountain springs, approximately 40 km south of Dublin, where a mild maritime climate on Ireland's east coast moderates maturation and preserves aromatic lift through the aging cycle. Production follows a 2:1 ratio of unmalted to malted Irish barley, triple-distilled through copper pot stills — a wash still of 250L with constriction, and a spirit still fitted with a reflux ball and ascending lyne arm — maximising copper contact and driving a clean, fruit-forward new make. The spirit enters cask at 62.5% ABV, matures for 3 years in ex-Bourbon barrels, then receives up to 1 year of finishing in virgin Dar Ghalda casks before bottling non-chill filtered at 43% ABV, with each bottle individually numbered by tree, cask, and bottle. The use of native Irish oak for finishing is a category first — no other major Irish whiskey producer has deployed this wood commercially at scale. Ready to drink now; the Dar Ghalda finish rewards decanting.
