The Harmony Collection was conceived as a direct dialogue between The Macallan's sherry-oak maturation programme and a single culinary ingredient — here, cacao — making it one of the few expressions in the range built around a flavour thesis rather than an age statement. That thesis is structurally credible: the Easter Elchies distillery's famously squat, 3,900-litre spirit stills — cast from 'death masks' of the original historic shapes by coppersmith Forsyths — are deliberately undersized to limit copper-vapour contact, producing a heavier, oilier new make that carries sherry-cask character with unusual density. The spirit matures on the Easter Elchies Estate, 485 acres of alluvial Speyside soil on the north-west slopes of the River Spey valley near Craigellachie, where 16 dunnage and 35 racked warehouses provide the cool, humid conditions that slow extraction and deepen integration. Maturation is exclusively in sherry-seasoned oak — European and American casks selected from Macallan's vertically integrated cask programme, which controls sourcing, air-drying, coopering, and Oloroso-seasoning in Jerez before a single fill. No caramel colouring (E150a) is added; all colour and sweetness are wood-derived. What distinguishes Rich Cacao within the Harmony series is its deliberate cask selection weighted toward darker, more reductive sherry character — roasted rather than dried-fruit — making it the most confectionery-forward expression in a collection that otherwise leans toward floral or spiced profiles.
