−6%Matsui Shuzo's decision to finish whisky in Sakura (cherry wood) casks — heads-swapped bourbon barrels re-coopered with cherry-wood staves — is a deliberate departure from the ex-bourbon/sherry orthodoxy that defines most Japanese and Scottish malts; no major Japanese house deploys Sakura at this scale. The distillery sits at the foothills of Mt. Daisen (1,729 m), an extinct volcano in Tottori Prefecture whose volcanic substrate filters the deep-aquifer groundwater used in production, yielding a characteristically soft, low-mineral base spirit that amplifies rather than competes with delicate wood character. The Sea of Japan coastal climate drives extreme seasonal swings — sub-zero winters to 38 °C summers — accelerating cask interaction in a way the producer explicitly compares to Islay maturation conditions. This expression belongs to the Kurayoshi Pure Malt tier: a blended malt combining sourced Scotch single malt with Japanese malt matured in Japan, bottled at 43–46% ABV; it is distinct from the fully in-house-distilled Matsui Single Malt sub-range launched in 2018. The Sakura cask finish is the defining technical feature — cherry wood contributes sandalwood, coconut, and a faint cherry-blossom lactone profile that no ex-bourbon or Mizunara regime replicates.
