The distillery was rebuilt in 1963 specifically to sustain the island's community — a social mandate that shaped its unusually approachable house style. Seven Wood takes its name from the seven distinct cask types used in maturation: ex-American bourbon barrels, virgin American oak, ex-Spanish sherry butts, ex-French Limousin oak, ex-French Tronçais oak, ex-French Nevers oak, and ex-French Vosges oak — each contributing a different aromatic layer. The result is a no-age-statement expression bottled at 42% ABV, non-chill-filtered to preserve texture.
