Production specifics: Unpeated malted barley is fermented in stainless steel before distillation in copper pot stills. The new-make spirit enters ex-Sherry casks (primarily Oloroso and PX types) for maturation in Kavalan's Yilan County warehouses, where tropical monsoon cycles drive rapid wood-spirit integration.
