Named for the Norse symbol of the slain warrior — three interlocked triangles associated with Odin — Valknut is Highland Park's deliberate invocation of Orkney's Viking heritage, an archipelago where Norse culture persisted centuries longer than on the Scottish mainland, and where the distillery's peat is still hand-cut from Hobbister Moor, seven miles southwest of Kirkwall. That peat is the technical anchor: shallow, heather-rich, and entirely free of tree roots, it kilns the distillery's floor-malted barley to approximately 20 ppm phenol — a floral, aromatic smoke profile categorically different from the tarry, medicinal character of Islay peat. Roughly 20% of the malt requirement is floor-malted on-site, hand-turned in the traditional manner, then blended with ~80% unpeated mainland malt before mashing. Fermentation runs 50–80 hours in 12 Oregon pine washbacks, and double distillation through low-reflux, pear-shaped stills yields a medium-heavy new make that carries smoke without stripping fruit. Maturation proceeds in Oloroso-seasoned European and American oak casks — both first-fill and refill — warehoused in 19 dunnage buildings with earthen floors on Mainland Orkney, where the temperate North Atlantic maritime climate slows extraction and preserves integration. What no peer replicates: Highland Park is the only distillery on earth drawing on Orkney heather-peat specifically, a raw material so site-locked that trials with mainland peated malt produced a measurably different spirit.
