Kavalan Oloroso Sherry Oak Single Malt Whisky (700 ml)

When T.T. Lee founded Yuan Shan Distillery in Yuanshan Township, Yilan County in 2005, the founding premise was deliberate transgression: prove that subtropical heat could replace decades of cool-climate patience. It worked — on Burns Night 2010 in Leith, Scotland, a Kavalan expression beat four Scotch and English whiskies blind.

The distillery sits at the confluence of cold air descending from the Xueshan (Snow Mountain) Range and humid Pacific Ocean breezes. Warehouse temperatures swing from 24°C on lower floors to 42°C on upper floors in summer, with no air-conditioning — accelerating wood extraction to a rate broadly equivalent to 10–15+ years in Scotland within a 4–6 year cycle. Water is drawn from Snow Mountain springs, filtered through gravel and sand.

New-make spirit is produced via double distillation in Forsyths copper pot stills (12,000-litre wash / 7,000-litre spirit), with the spirit cut deliberately narrowed to 65–55% ABV to maximise ester complexity. Fermentation runs a multi-stage 60–72 hour cycle deploying a dedicated 'fruit producer' yeast strain for ester development. The Oloroso sherry oak maturation layers dried fig, dark raisin, and walnut-skin grip directly onto the distillery's signature tropical-fruit and Snow Mountain spring-water creaminess.

Special feature: Unlike Scotch sherry-bomb expressions built on slow tannin extraction, Kavalan's Oloroso character is compressed into subtropical time — the same oxidative richness, but fused with mango and papaya rather than orchard fruit, a flavour profile no cooler-climate distillery can replicate structurally.
