When William Matheson converted the Morangie Farm brewery in 1843, he installed second-hand London gin stills — an accident of budget that became the distillery's defining technical identity. Those proportions survive today in Scotland's tallest copper pot stills at 5.14 metres, generating extreme reflux that strips heavy congeners before the spirit ever reaches a cask.

The distillery sits on the southern shore of the Dornoch Firth in Tain, Ross-shire, drawing water from Tarlogie Springs — rainwater that has filtered through limestone and sandstone for up to a century, producing hard, mineral-rich water structurally unlike the soft water of most Speyside operations. That mineral backbone runs through the new-make and into the wood.

The Grand Vintage 1991 matures in American white oak ex-bourbon casks sourced from Glenmorangie's own Ozark Mountain forests in Missouri: staves air-dried two years, then leased to bourbon producers for four years of seasoning before a single drop of Highland spirit enters the barrel. The tight heart cut — collected from 74% ABV down to 60% ABV — excludes feinty notes entirely, preserving the distillery's signature citrus and stone-fruit register across three decades of maturation.

What separates this expression from any standard age-statement release is the declaration of a specific distillation year: 1991 spirit bottled at full vintage identity, a practice Glenmorangie reserves for its rarest warehouse selections rather than its core range.

After more than thirty years in oak, expect the Ozark wood's vanilla and peach to have deepened into dried apricot and beeswax, with the limestone-water minerality still present on the finish. Drink now through the next decade.
