Suntory Hibiki 17 Years Old Whisky (700 ml)

Hibiki 17 was discontinued in 2018 — not by choice, but because Suntory's 1990s production trough left insufficient aged stock to sustain it. That scarcity is structural, not manufactured, and it makes every remaining bottle a fixed-supply artefact of a specific era in Japanese whisky history.

The blend draws malt from Yamazaki (Shimamoto-cho, Osaka; ~25 m elevation; soft aquifer water fed by the Katsura, Uji, and Kizu rivers; warm, humid microclimate accelerating maturation) and Hakushu (Southern Japanese Alps; ~708 m elevation; granite-filtered water; cool air slowing extraction), with Chita grain (corn-dominant, column-distilled at ~94% ABV, Chita Peninsula) constituting the structural majority of the blend by volume.

What separates Hibiki 17 from virtually every other blended whisky on the market is its simultaneous draw across five cask types: American white oak ex-bourbon, Spanish oak Oloroso sherry, new American oak, ex-wine casks, and Japanese Mizunara oak (Quercus mongolica) — a wood so porous it is cooperated almost nowhere else in the world, yet delivers irreplaceable sandalwood, incense, and kyara aromatics. Over 30 distinct malt types were assembled for each batch, the product of Suntory's 'Tsukuriwake' philosophy of producing the full flavour spectrum in-house without inter-distillery cask trading.

The Mizunara component — present at meaningful levels in the 17-year tier — is the special feature no Scotch blender can replicate. Drinking window: open now; further cellaring will not improve an already-discontinued blend.
