The contribution of Nathan 'Nearest' Green — the enslaved man who taught Jack Daniel the Lincoln County Process and served as the distillery's first Master Distiller — is the technical and moral foundation of every drop produced at Cave Spring Hollow. That process, pre-barrel gravity filtration through 10-foot vats of handmade sugar maple charcoal over 3–5 days, is what legally and stylistically separates this from bourbon under Tennessee's 2013 HB 1084.
The distillery sits anchored to a limestone cave spring maintaining a constant 56°F (13°C), delivering iron-free water — iron being actively detrimental to whiskey flavor — while contributing calcium and magnesium. Tennessee's pronounced seasonal temperature swings drive aggressive wood interaction across the multi-storey rickhouses.
Single Barrel Select breaks from the flagship's blending philosophy entirely: each bottle is drawn from a single, individually hand-selected barrel on the 8th (top) floor of the rickhouse — the most thermally active position, producing the most wood-forward, concentrated character in the house. Bottled at 47% ABV (94 proof), unchill-filtered relative to Old No. 7's 40% standard, and drawn from an 80% corn / 12% malted barley / 8% rye mash bill fermented in open-top cypress vats using a sour mash backset for pH control.
The top-floor single-barrel selection is the transgression here: where Old No. 7 deliberately mingles 175–200 barrels across floors to neutralize extremes, Single Barrel Select amplifies them. Barrel-to-barrel variation is real and intentional — caramel and toasted oak deepen noticeably, and the higher proof preserves aromatic intensity the standard expression sacrifices for approachability.
