Casa Flamenco sources its blue Weber agave from the Los Altos (Highland) region of Jalisco, where elevations above 2,000 metres and red clay-rich soils force the plant to mature slowly — typically 8–10 years — concentrating natural sugars and producing a distinctly sweeter, more floral agave character than Lowland expressions. The thinner highland air and cooler nights amplify that sugar accumulation, which translates directly into a richer cooked-agave core in the distillate.
After double distillation in pot stills, the blanco spirit is rested in American oak barrels for the reposado period (a minimum of two months under NOM regulations, though producers in this tier commonly extend to 6–11 months), allowing the wood to contribute vanilla and baking-spice layering without overwhelming the agave's highland signature. The American oak imparts a softer, sweeter wood influence compared to French oak alternatives increasingly used by competitors.
What sets this expression apart within the reposado category is its deliberate restraint on oak contact — the agave-forward profile remains the structural centre rather than ceding ground to wood. The result is a reposado that reads closer to an elevated blanco than a proto-añejo, a positioning choice that suits the expressive Los Altos raw material. Drink now through 2027.
