Cenote Blanco takes its name from the sacred limestone sinkholes of the Yucatán Peninsula — a nod to the water source and the geological identity that defines the brand's philosophy of place. The agave, however, is grown in the Los Altos (Highland) region of Jalisco, where red clay-rich soils and elevations above 2,000 metres slow the maturation of Agave tequilana Weber azul, concentrating natural sugars and producing a more floral, fruit-forward raw material than lowland counterparts.
Production follows a traditional trajectory: piñas are slow-roasted in stone ovens rather than industrial autoclaves, preserving more of the agave's cooked-sweet character. Fermentation uses open wooden vats, and the liquid is double-distilled in copper pot stills — a choice that retains more congeners and textural weight than column distillation. The spirit is bottled unaged at 40% ABV, without chill-filtration, presenting the distillate in its purest form.
What separates Cenote Blanco within the blanco category is the deliberate stone-oven roast combined with copper pot distillation — a pairing more common in artisanal mezcal production than in commercial tequila. The result is a blanco with uncommon roasted-agave depth alongside the citrus brightness typical of highland terroir.
