Sharaku Junmaishu originates from Kamioka, a subregion of Akita Prefecture in Japan's Tohoku region, where winter snowfall and cool growing seasons define the terroir. The brewery sources local rice varieties and employs traditional brewing methods characteristic of Akita's sake heritage.
This is a junmai (pure rice) sake with no added alcohol or sugars — the entire expression derives from fermented rice alone. The brewing process employs koji mold cultivation to convert rice starches into fermentable sugars, followed by multiple parallel fermentation (koji and yeast working simultaneously), a technique that builds complexity and umami compounds. The sake is typically aged briefly before release, allowing primary fermentation flavors to settle while retaining freshness.
Junmai sakes from Akita are known for their mineral-forward character and pronounced umami backbone — a signature of the region's water chemistry and rice polishing traditions. Sharaku's junmai expression carries this regional identity without aggressive filtering, preserving natural amino acids and peptides that contribute savory depth.
