Kinmon Akita, founded in 1944 in Kakunodate — a castle town in Akita Prefecture — built its reputation on the region's legendarily soft snowmelt water drawn from the Ou Mountain Range, water so low in minerals it yields sake of unusual delicacy even in unfiltered form.

Akita sits in a cold inland basin where harsh winters and short summers stress the rice into dense, starchy grains. The brewery uses Akitafuji, a sake rice variety developed specifically for Akita's climate, prized for its large shinpaku (white starchy core) that absorbs koji enzymes efficiently and contributes a full, milky body.

This is a Nigori — the sake is coarsely filtered through a mesh rather than pressed clean, leaving rice solids suspended in the bottle. The result is a characteristically opaque, white liquid with residual sweetness from unfermented sugars and a thick, coating texture. No distilled alcohol addition is indicated, placing it in the junmai tradition.

What distinguishes this expression within the Nigori category is its regional specificity: Akitafuji rice is rarely seen outside Akita breweries, giving this cloudy sake a grain-forward identity distinct from the more common Yamadanishiki-based nigori styles.

Best served well-chilled and shaken gently to redistribute the sediment; drink young to preserve the fresh, lactic brightness.
