Founded in 1849 by Hikobe Shimazaki in Nasukarasuyama City, Tochigi Prefecture, Shimazaki Brewery built its identity around richness and depth at a time when delicate aromatic ginjo styles would come to dominate the premium market — a deliberate counter-position that defines every tier of the Azumarikishi range. The brewery draws on subterranean groundwater fed by the Naka River from the foothills of Mt. Nasu: soft water that slows saccharification, extends fermentation, and naturally tilts the profile toward sweetness and body rather than sharp acidity. This Tokubetsu Honjozo is classified tokubetsu (special), indicating either a superior rice polishing ratio or a distinctive production method beyond the standard honjozo specification — a step up within the category without crossing into ginjo territory. As a nama (unpasteurized) release, the sake skips the standard two-pasteurization cycle, preserving the enzymatic vibrancy and lactic freshness of the fermentation tank intact. Approximately half the sake rice is locally sourced within 50 km of the brewery, with varieties including Tochigi Prefecture-exclusive cultivars Tochigi no Hoshi, Hitogochi, and Yumesasara alongside nationally recognized Yamadanishiki and Gohyakumangoku. The 300 ml format makes this the rare opportunity to experience Azumarikishi's rice-forward house character in a nama state — a style the brewery does not center its reputation on, making this an outlier in their lineup.
