This Junmai Ginjo employs a 40% polish ratio (seimaibuai), removing 60% of the outer grain layers to expose the starch-rich core. The Asagao designation (morning glory) signals the brewer's aesthetic intent: a sake of delicate, ephemeral character. Fermentation parameters and water source leverage Matsumoto's elevation and mineral profile, typical of alpine sake production where cooler conditions extend yeast activity and refine aromatic development.
