Founded in 1865 and stewarded by the Okasora family through the Taishō era and beyond, Chiyomusubi operates from Sakaiminato City at the northwestern tip of Tottori Prefecture — a coastal brewery whose identity is inseparable from the Sea of Japan's maritime microclimate and the remote Chugoku Mountains behind it. Brewing water is drawn by hand from a natural spring in Daito Town, Shimane Prefecture, a three-hour round trip made daily during the brewing season — a logistical commitment that signals how seriously the brewery treats water chemistry. That slightly soft mountain spring water shapes the clean, low-mineral backbone of this sparkling cuvée. 'Syuwatto Sora' (シュワっとそら — roughly 'bubbly sky') is a secondary-fermentation sparkling sake, bottled in a compact 300 ml format designed for accessibility and freshness. The brewery's proprietary yeast collection — strains selected and preserved annually from the best-performing fermentations — drives the carbonation and aromatic lift. What sets this expression apart within Chiyomusubi's range is its deliberate departure from the brewery's signature Gōriki-driven density: 'Syuwatto Sora' prioritises effervescence and immediacy over the structured, age-worthy weight the brewery is otherwise known for — a conscious stylistic transgression.
