The Yasufuku family has brewed at Mikage-go in Higashinada Ward — the heart of Nada-Gogo, Japan's most storied sake district — since 1751, now in its 13th generation. Awasaki is the sparkling expression of that lineage, built on Yamadanishiki rice grown in the Rokko Mountain foothills of Ozo-cho, Kita Ward, at 50–200 m elevation, where diurnal swings exceeding 10°C concentrate starch and slow ripening. The brewery's water is Miyamizu, a granite-filtered spring low in iron and high in phosphorus and potassium — historically the engine of Nada's dry, mineral-driven style. For its higher-grade lines, Fukuju deliberately blends Miyamizu with reverse-osmosis-treated water, moderating mineral hardness to slow fermentation and coax a fruitier, softer profile — a deliberate departure from Nada orthodoxy. Koji is cultivated entirely by hand (tezukuri), which the brewery regards as the non-negotiable foundation of quality. The sparkling format translates that fruit-forward house character into a fine-bubbled, low-alcohol format that no conventional Nada brewery has historically prioritised. As a 300 ml NV expression, Awasaki is best enjoyed young and well-chilled, with the effervescence amplifying the rice-derived delicacy and Miyamizu mineral lift.
