In 1946, a single fermentation tank at Masumi's original kura in Suwa yielded a yeast strain so vigorous and clean that the Brewing Association distributed it nationally — Kyokai Yeast No. 7 now drives fermentation at over 60% of Japan's sake breweries, yet Masumi alone applies the labour-intensive yamahai yeast-starter method across its entire range, including this entry-level Karakuchi Gold. Where most breweries reserve yamahai for premium tiers, Masumi cultivates natural lactic-acid bacteria in the shubo tank over approximately two weeks before yeast is introduced — no commercially added lactic acid — producing a structural backbone of higher natural acidity and deeper umami than sokujo-method peers at this price point. Water is drawn from the Kirigamine Highlands of the Yatsugatake (Eight Peaks) Range, feeding the Suwa Basin site historically known as Shimizu-machi, 'Clear Water Village.' Rice — predominantly Miyama Nishiki, grown in Nagano — is milled in-house at the brewery's own polishing plant. The result is a dry (karakuchi) table sake built for the founding philosophy: so balanced it disappears into the meal. Drink now through near-term; serve lightly chilled or at room temperature to open the lactic texture.
