“Shinbun-no-Sake” refers to a traditional, highly meticulous pressing technique—often associated with fukuro-tsuri (bag-drip pressing)—where the sake is allowed to flow naturally without mechanical pressure. This method yields only the purest and most refined portion of the sake.
As a Daiginjo, the rice is polished to a high degree, removing outer layers to reveal the pure starch core. Combined with low-temperature fermentation, this results in a sake that emphasizes precision, elegance, and aromatic finesse.
This style is often produced in very limited quantities, as the process is time-intensive and yields less liquid—but significantly higher quality. The result is a sake that feels almost weightless yet deeply expressive.
