The Purupuru Sparkling Jelly Sake in Peach is a deliberate departure from that austere house identity: a format-breaking, gelatin-textured sparkling sake designed for immediate sensory novelty rather than contemplative drinking. The jelly (purupuru) texture is the defining technical transgression — the product is engineered to be consumed semi-solid, a format with no precedent in classical nihonshu. Fermentation follows Hakutsuru's standard multiple parallel fermentation using Aspergillus oryzae koji and proprietary in-house yeast strains developed through the brewery's own research program; the peach flavoring and carbonation are integrated post-fermentation. Packaged in a 190 ml single-serve can within a 30-can retail pack, this expression sits entirely outside the Nada otoko-zake tradition — it is Hakutsuru leveraging its industrial-scale consistency and distribution infrastructure to reach a category that classical sake has never addressed.
