Founded in 1743 by Jihei Kano in Nada-Gogo, Hakutsuru built its reputation on miyamizu — the mineral-rich hard spring water drawn from the Rokko Mountain aquifer, high in potassium, phosphorus, and calcium, that drives vigorous yeast fermentation and a characteristically dry, structured house style. This Purupuru Sparkling Jelly Sake Apple is a deliberate departure from that austere tradition: a jelly-texture sparkling sake format that suspends carbonation within a semi-solid gel matrix, delivering apple flavour and effervescence simultaneously through mouthfeel rather than purely through liquid. Produced at the East Nada Ward brewery complex at the base of Mount Rokko, the base sake undergoes multiple parallel fermentation using koji (Aspergillus oryzae) and Hakutsuru's proprietary in-house yeast strains, with cold Rokko oroshi winds supporting low-temperature fermentation for aromatic lift. The 190 ml can format — a direct descendant of Hakutsuru's 1878 pioneering move into pre-packaged sake — makes this the most format-transgressive expression in the brewery's lineup: the world's largest sake producer delivering its Nada terroir in a shelf-stable, spoonable-or-drinkable jelly. No seimaibuai or rice variety is confirmed for this SKU. NV by nature; best consumed fresh.
