Sod Chaeng — meaning "fresh and honest" in Thai — is produced in Khao Yai, the elevated plateau northwest of Bangkok where cool nights and volcanic-influenced soils have made the region Thailand's most serious agricultural terroir. The brand takes its name and philosophy from a commitment to minimal intervention with locally sourced sugarcane.
Khao Yai sits at roughly 300–400 m elevation, where diurnal temperature swings slow fermentation and concentrate aromatic compounds in the base wash. The sugarcane grown in this highland microclimate carries a grassy, mineral character distinct from lowland Thai cane.
Small-batch pot-still distillation preserves the raw cane character rather than stripping it to neutral spirit. The rum is bottled to express the fresh agricole-adjacent style — unaged or lightly rested — keeping the green, vegetal cane notes intact rather than masking them under heavy oak.
What sets this expression apart within Thai spirits is its deliberate agricole-influenced approach in a market dominated by molasses-based column-still rum, making it one of the very few Thai rums anchored to fresh cane juice or minimally processed cane in the Khao Yai highlands.
