When Facundo Bacardí Massó founded his Santiago de Cuba distillery in 1862, he installed a proprietary strain of cultured yeast and a charcoal-filtration step that were radical departures from the heavy, funky rums of the era — a deliberate bid for a lighter, drier style that would define the Cuban rum template. Carta Blanca is produced from molasses-based fermentation using Bacardi's house yeast culture, which suppresses ester production and drives a cleaner fermentation profile. The spirit is column-distilled, then rested in lightly charred American white oak barrels before charcoal filtration strips residual colour and softens congeners, leaving the rum technically white but carrying trace wood influence. What separates Carta Blanca from most commodity white rums is that brief oak contact — it is not a raw, unaged spirit but a filtered, lightly aged one, a distinction that adds textural weight without colour. The result is a dry, neutral-leaning rum built for high-volume cocktail use, where its low ester load lets citrus, mint, and sugar-based ingredients read clearly rather than compete with the base spirit.
