The Bitter Truth was founded in Munich in 2006 by bartenders Adam Elmegirab and Stephan Berg, who set out to resurrect pre-Prohibition bitters styles that had vanished from the European market for decades. Their Celery Bitters directly references the 19th-century apothecary tradition of celery-seed tinctures used as digestive and nerve tonics — a lineage that anchors every production decision.
Produced in Bavaria, the formula centers on cold maceration of celery seed and celery root in a neutral grain spirit base, a method that preserves the volatile aromatic compounds — green, vegetal, and faintly earthy — that heat-based extraction would destroy. Secondary botanicals add depth without overwhelming the lead ingredient.
At 39% ABV, the concentration is calibrated for dash-level deployment: a few drops restructure the savory architecture of a cocktail rather than merely seasoning it. Unlike most bitters on the market, celery bitters occupy an almost entirely savory register — no citrus peel, no warm spice dominance — making this one of the few bitters that functions as a vegetable-forward flavor bridge rather than a sweetness modifier.
