Curt Mast inherited his father's distillery in Wolfenbüttel, Lower Saxony in 1934 and reformulated the recipe around a stag-hunting culture — the name itself translates to 'Master Hunter,' and the bottle still carries the image of a stag framed by a cross, referencing the legend of Saint Hubertus. That origin story is inseparable from the liquid: Jägermeister is built on 56 botanicals sourced globally, including bitter orange peel, licorice root, ginger, star anise, and ginseng, though the full list remains proprietary after nearly 90 years.
Production begins in Wolfenbüttel, where each botanical is macerated separately in neutral grain spirit before the individual extracts are blended, sweetened with sugar and caramel, and rested in oak casks for approximately one year before bottling at 35% ABV. The oak aging rounds the sharper herbal edges without stripping the pronounced bitterness that defines the category. What sets this expression apart from most European amari is the deliberate balance between sweetness and medicinal bitterness — it sits closer to the sweet end of the Kräuterlikör spectrum than Italian amari, making it unusually versatile as both a digestif and a cocktail base.
