In 1973, Benito and Giannola Nonino made a decision that rewrote Italian spirits law: they separated individual grape pomaces by variety and distilled each alone, beginning with Picolit. The Moscato Monovitigno® followed that same logic — 100% Moscato pomace, freshly destalked and delivered to the Percoto distillery within one hour of pressing, then held under vacuum in stainless-steel tanks at controlled temperature for up to 48 hours to arrest harmful secondary fermentations before distillation. Residual wine-fermentation yeast drives the sugar conversion over approximately five days. Distillation runs through bespoke copper steam discontinuous (batch) stills — among the 66 handcrafted units housed across five artisanal sub-distilleries on the Percoto estate — with precise head-and-tail cuts made by hand. The result is bottled with zero color additives; no colorants are used across any Nonino expression. What makes this unusual within the grappa category is the Monovitigno® concept itself: before Nonino lobbied for its legal recognition, single-varietal pomace distillation did not exist as a protected Italian spirit category. As a non-vintage spirit, character is consistent across releases — expect the aromatic intensity of Moscato's terpene-rich skins translated directly into the distillate, with the freshness preserved by that immediate pomace handling protocol.
