Peddlers Gin was founded in Shanghai and built its identity around translating Chinese culinary and botanical traditions into Western gin structure — a deliberate inversion of the usual import dynamic. The Salted Plum expression takes that premise to its logical extreme, centering the entire botanical bill on suān méi (酸梅), the sun-dried, salt-cured plums that anchor Chinese street-food culture from Beijing to Guangzhou.
The base is a London Dry-style grain spirit redistilled in a copper pot still, with salted plum integrated at the botanical charge stage rather than added as a post-distillation flavouring — a production choice that preserves the plum's volatile aromatic compounds while the salt registers as textural weight rather than overt seasoning. The result sits at 40% ABV, bottled without chill-filtration to retain mouthfeel.
What separates this from European fruit gins is the saline-umami dimension: most fruit gins chase sweetness; this one chases the preserved, fermented edge of the dried plum, landing closer to a Japanese umeshu in aromatic DNA than to a British sloe gin. Stone fruit, dried apricot, and a distinct briny lift define the mid-palate, with juniper present but deliberately subordinated.
