Malfy was founded in 2016 by the Vergnano family at the Torino Distillati facility in Moncalieri, Piedmont — a deliberate choice to anchor an Italian-identity gin in a distillery with over a century of spirits heritage. The brand's signature move was sourcing IGP-certified Sfusato Amalfitano lemons from the sun-drenched Amalfi Coast cliffs, where volcanic-limestone terracing and salt-laden Mediterranean air concentrate the peel's aromatic oils far beyond what inland citrus achieves.

Production centres on cold maceration of fresh lemon peel prior to distillation, preserving volatile citrus esters that heat would destroy. The botanical bill — juniper, coriander, angelica root, and Italian iris root alongside the lemon — is distilled in traditional copper pot stills. Bottled at 41% ABV without chill-filtration, the gin retains the natural oils responsible for its characteristic haze when chilled.

What separates Con Limone within the contemporary gin category is the legally protected provenance of its primary botanical: the IGP designation on the Sfusato lemon is a geographic guarantee no other gin using generic lemon peel can replicate.
