When Maurice Hennessy codified the VSOP designation in the 19th century, he was not simply labeling age — he was institutionalizing a blending philosophy that the Fillioux family has executed across eight consecutive generations, an unbroken 200-year partnership without parallel in global spirits. That continuity is the technical backbone of this expression. Sourced from Grande Champagne, Petite Champagne, Borderies, and Fins Bois — soils ranging from shallow clay-limestone chalk in Grande Champagne (the cru prized for long-aging potential) to the clay-flint of Borderies (which contributes rounder, violet-edged character) — the blend draws on eaux-de-vie matured across 65 chais, with riverside cellars near the Charente producing mellower spirit and drier inland chais yielding more characterful stock. Distillation is performed in traditional Charentais alembic copper pot stills, with Hennessy's house-defining decision to distill both with and without lees, and to reintroduce heads and tails into the brouillis before the second pass — concentrating congeners for a richer, darker-fruited profile than most peers. Eaux-de-vie are aged a minimum of four years in Limousin oak from Hennessy's own forests, cooperaged on-site at 400–500 barrels per year by hand. The Year of the Horse edition alters nothing in the liquid — the collectible packaging isolates this VSOP as a cultural artifact without reformulating the blend, a transparency rare among limited-edition spirits releases. Bottled at 40% ABV, lightly filtered, non-vintage.
